Ice Wine Infused Peaches

6 fresh peaches, skinned, pitted and halved
½ cup sugar (125 ml)
1 cup ice wine (250 ml)
1 cup of water (250 ml)
1. In a sauce pan combine 1 cup of water, sugar and ice wine and simmer over low heat and until the sugar has dissolved. Cook syrup for 3 additional minutes, take off the heat and set aside until needed.
2. In a glass bowl, place peach halves and pour ice wine syrup on top and refrigerate to allow the flavors to mix.
3. Serve chilled in a small bowl and garnish with a drizzle of icing sugar.
