Indian Brussels Sprouts

Directions for: Indian Brussels Sprouts

Ingredients

2 Tbsp grapeseed oil

1 Tbsp garlic, minced

1 Tbsp ginger, minced

1 Tbsp coriander seeds, crushed with hands

1 Tbsp dried fenugreek leaves

1 tsp smoked paprika

1 pinch salt

1 pinch pepper

1 lb(s) brussels sprouts, trimmed and cut in half

½ cup water

1 pinch salt

Directions

1. Place a skillet over medium heat and add oil. When it is hot, add garlic and ginger and cook for 2 minutes. Add spices, salt and pepper and cook for 30 seconds. Add brussels sprouts and water and cover with a tight fitting lid. Let steam until sprouts are bright green and tender-crisp, about 6-8 minutes.
