English (seedless) cucumber

sweet red pepper

Vidalia or other sweet onion

cups yellow grape tomatoes, halved

cup pitted Kalamata olives (optional)

cup feta cheese, crumbled (optional)

cup baby arugula

cup fresh oregano, chopped
Salt and freshly ground black pepper to taste

In a large bowl, cut the cucumber, red pepper and onion into
large chunks (you can add your favorite crunchy vegetables too.
