I used a Japanese grinding bowl to mash the sesame seeds but you can crush them with a regular mortar and pestle. Let the salad sit for a few hours before serving so the flavours have a chance to develop. Yield is 4 servings.

cup white sesame seeds

tsp sugar, to taste

tsp dark soya sauce

Tbsp chicken broth

lb(s) fresh spinach, washed, blanched

Step 1
On medium heat, toast the sesame seeds in a dry pan until popping, about 30 seconds.
Step 2
Crush them in a Japanese grinding bowl.
Step 3
Add sugar.
Step 4
Stir.
Step 5
Add the soy sauce and chicken broth.
Step 6
Squeeze spinach dry and chop into 1 1/2-inch lengths.
Step 7
Gently mix the spinach with the dressing.
Step 8
Do not crush.
Step 9
Serve at room temperature.
