Lamb T-bones are a luxurious cut, best served with as little adornment as possible. Gremolata, a simple garnish made from parsley, lemon zest and garlic, will add a punch of flavour without distracting from the lamb’s natural deliciousness. Because of their small size, lamb T-bones (also known as loin chops) are perfect for serving family style in the center of the table at an Easter dinner or any special occasion. For 1-inch thick chops, 2 per person is a good main course portion.

Preheat the oven to 400F
In a mixing bowl, combine the parsley, lemon zest, garlic and 1 tablespoon olive oil. Mix well and season with salt & pepper.
Heat a small amount of olive oil & 1 tablespoon butter in a skillet and sear the lamb until golden brown on each side, about 3 minutes per side. Transfer the lamb to a baking tray and roast in the oven at 400F for 10 minutes.
Place the lamb on a large serving platter and garnish with gremolata.
