Chef’s note: One of my favorite things to do is to suck out the heads of the shrimp. In Italy this is a major compliment to the chef. It’s also very flavorful.

lemons, juiced
salt, to taste
pepper, to taste
chili flakes (optional)
olive oil, to taste
parsley

Step 1
Shell and clean your shrimp leaving the heads on. Lay them on a plate. Squeeze fresh lemon juice over them. Some salt, pepper, or chili flakes and a good splash of olive oil. This is a ceviche style dish that calls for letting the fish stay in the marinade before serving. This will partially cook the shrimp. Before serving sprinkle some fresh parsley over the whole thing.
