¼ cup butter

1 onion, chopped

4 cloves garlic, chopped

2 sweet potatoes, diced or shredded, unpeeled

6 cups orange juice OR 6 cups of chicken broth OR some of both

½ cup heavy whipping cream

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon cinnamon

½ teaspoon salt


1. In a soup pot over medium heat, melt the butter. Sauté the onions and garlic until they are golden brown and delicious, a few minutes. Add the sweet potato, orange juice, whipping cream, chili powder and cumin. Cook until the potatoes are soft, about 15 minutes. Whisk in the cinnamon and salt, smoothly puree with an immersion blender, serve and share.
