No-Cook Peach Jam

2 ½ cups peeled, pitted and finely chopped peaches
6 ½ cups granulated sugar
2 pouches Certo Liquid Pectin
⅓ cup lemon juice
1. MEASURE prepared fruit into a large bowl. Add sugar to fruit and mix well. Let stand 10 min.
2. STIR in liquid pectin and lemon juice. Continue to stir for 3 min. until most of the sugar is dissolved.
3. POUR into clean jars or plastic containers. Cover with tight lids and let stand at room temperature until set (may take up to 24 hours). Store in freezer. If used within 3 weeks, jam may be stored in refrigerator.
4. Creative variations: Fuzzy Navel - Add 2 Tbsp (30 mL) peach schnapps Cherry Peach - Add 1/4 cup (50 mL) chopped maraschino cherries Nutty Peach - Add 1/4 cup (50 mL) slivered almonds or chopped pecans Sunny Peach - Add 1 Tbsp (15 mL) grated orange or lemon rind.
