Old-Fashioned Tomato with Arborio Rice Soup

Ingredients

2 tablespoons unsalted butter

1 yellow onion, sliced

3 cloves garlic, minced

50 ounces canned tomatoes with juices

2 cups chicken stock

¼ cup 35% cream

salt and pepper, to taste

1 cup Arborio rice, cooked

Directions

1. Melt butter over medium heat in pot. Add onions and garlic, cook for five minutes until onions soften.

2. Add tomatoes and stock. Bring to boil and reduce heat. Simmer for 40 minutes stirring periodically.

3. Remove from heat and purée until very smooth with either an immersion blender or regular blender.

4. Add cream, rice and adjust seasonings with salt and pepper.
