Pasta with Ham and Cheese

1 pound (454 g) macaroni elbows or other short pasta varieties
2 tablespoons (30 mL) butter
4 sticks celery, sliced
1 leek (white and tender green parts), cut in 4, sliced
½ pound (225 g) old-fashioned smoked ham cut into small cubes
1 cup (250 mL) IÖGO Greko Plain
2 tablespoons (30 mL) Dijon mustard
3 ½ ounces (100 g) milk, medium or aged cheddar cheese, grated
3 ½ ounces (100 g) provolone or mozzarella cheese, grated
⅓ cup (80 mL) Italian parsley, coarsely chopped
salt and freshly ground pepper
1. In a large saucepan of salted water, cook the pasta as per package instructions.
2. Meanwhile, in a large frying pan, heat the butter over medium heat and sautéed the celery and leek for approximately 5 minutes. Mix well and season to taste. Add the ham and continue cooking for another 2 to 3 minutes.
3. Drain the pasta and return to the saucepan, add the yogurt, mustard vegetables, ham and the cheese. Stir over low heat until the cheese is properly melted and the pasta is hot. Add the parsley, correct the seasoning and serve immediately. Tip: You can substitute the macaroni by rotiglioni, scoobidoo, fusilli, rouelles, etc. and the old-fashioned smoked ham by other kind of ham.
