Base

oz butter

cups buttermilk

Peaches

Fresh peaches, sliced
cinnamon

Buckle Topping

oz cake flour

Step 1

Preheat oven to 350ºF.

Step 2

Cream together the butter, sugar and lemon zest until light and fluffy.

Step 3

Whisk together the flour, baking soda, baking powder, salt and ginger in a separate bowl.

Step 4

Add the eggs gradually to the butter and sugar and mix.

Step 5

Alternate adding the dry ingredients and buttermilk to the wet mixture and mix until smooth.

Step 6

In a bowl, mix together fresh peach slices and cinnamon.

Step 7

Place in a mixer until or massage with hands until combined.

Step 8

In a greased muffin tin pour in batter and top each with 4 peach slices and buckle topping.

Step 9

Bake between 15 – 20 minutes.

Step 10

Let buckle cool completely before eating.
