Pear Waldorf Lettuce Wraps

8 green leaf lettuce leaves (8)
½ cup finely chopped pears (125ml)
½ cup finely chopped seedless red grapes (125ml)
½ cup finely chipped celery (125ml)
¼ cup chopped toasted pecans (50ml)
1 Tbsp yogurt (30ml)
1 tsp each lemon zest and juice (5ml)
¼ tsp brown sugar (1ml)
salt and pepper
toothpicks or parchment paper
2 Tbsp yogurt
¼ cup dried cranberries
1 Tbsp finely chopped chives
1. Whisk yogurt together in a small bowl with the lemon zest, juice and brown sugar.
2. Combine pears, grapes, celery, cranberries, pecans and chives in a bowl. Toss gently to combine with the dressing. Season, to taste, with salt and pepper.
3. Lay lettuce leaves on a work surface, dull side up. Divide mixture evenly between the centers of each of the lettuce leaves. Fold the stems and tops inward and roll tightly from one side to form cone-shaped wraps. Use toothpicks to hold wraps together, or roll with parchment paper.
