8 green leaf lettuce leaves (8)

½ cup finely chopped pears (125ml)

½ cup finely chopped seedless red grapes (125ml)

½ cup finely chipped celery (125ml)

¼ cup chopped toasted pecans (50ml)

1 tablespoon yogurt (30ml)

1 teaspoon each lemon zest and juice (5ml)

¼ teaspoon brown sugar (1ml)

salt and pepper

toothpicks or parchment paper

2 tablespoons yogurt

¼ cup dried cranberries

1 tablespoon finely chopped chives

1. Whisk yogurt together in a small bowl with the lemon zest, juice and brown sugar.

2. Combine pears, grapes, celery, cranberries, pecans and chives in a bowl. Toss gently to combine with the dressing. Season, to taste, with salt and pepper.

3. Lay lettuce leaves on a work surface, dull side up. Divide mixture evenly between the centers of each of the lettuce leaves. Fold the stems and tops inward and roll tightly from one side to form cone-shaped wraps. Use toothpicks to hold wraps together, or roll with parchment paper. Tip: You could use green seedless grapes as a substitute for red. For a plated version of this salad, top lettuce leaves with the pear mixture.
