ingredients

Crust

2
cup whole-wheat flour
2
cup unbleached whole-wheat flour

tsp baking powder
1
Tbsp tumeric
1
cup vegetable shortening
1
cup fresh carrot juice
½
cup diced jalapeno peppers
½
tsp sea salt

Filling

2
cup TVP granules (texturized vegetable protein), available in health food stores

cup hot water

Tbsp olive oil
Sprig of fresh thyme
3
cloves garlic
½
cup diced Roma tomatoes
Scotch bonnet pepper, finely diced
Seasoning salt, to taste

Assembly

Flour, for rolling dough

Tbsp flour

Tbsp water
Olive oil for brushing

Step 1

Sift the dry ingredients together.

Step 2

Cut the shortening through the flour.

Step 3

Add the carrot juice or water and the diced pepper.

Step 4

Knead into a ball.

Step 5

Divide the dough into 10 balls of dough, cover and allow to rest for 1/2 hour.

Step 6

Soak the TVP in the hot water for approximately 20 minutes.

Step 7

Drain and rinse the TVP granules in a strainer.

Step 8

Heat the olive oil in a deep frying pan.

Step 9

Add the thyme and garlic.

Step 10

Saute 1 minute.

Step 11

Stir in the tomatoes and Scotch bonnet pepper.

Step 12

Stir in the soaked TVP and salt to taste.

Step 13

Allow the mixture to simmer on low heat for 20 minutes, stirring occasionally.

Step 14

Cool.

Step 15

Preheat oven to 350 degrees F.

Step 16

On a floured surface, roll each ball of dough out into a 6-inch diameter circle, about 1/8” thick.

Step 17

Fill one half of each circle with filling and fold the dough over.

Step 18

With a fork, mix together the 2 tbsp. flour and 3 tbsp. water in a small bowl to make a paste.

Step 19

Dip the fork into the paste and press the edges of the dough to seal.

Step 20

Brush the patties with olive oil.

Step 21

Put the patties on a nonstick baking sheet.

Step 22

Bake at 350 degrees F. for 20 minutes or until the patties are light brown.
