Picanha is a popular Brazilian cut of beef, and will make sure these sliders will be popular wherever you are!
If the butcher doesn’t recognize picanha cut of beef, ask for the top sirloin cap.

ingredients

g ground picanha
slider buns
Boston lettuce
2
medium cooking onions
1 ½
oz cachaça or white rum
½
cup mayonnaise
Sriracha
100
g Brie cheese

Step 1

Cut the onions very thinly. Cook them slowly until they are caramelized. Add the cachaça and reduce to evaporate the alcohol.

Step 2

Make 10 mini burgers of 30g each.

Step 3

Place the mayonnaise in a bowl. Mix Sriracha until the desired spiciness is achieved.

Step 4

Grill or pan fry the burger. Salt and pepper to taste.

Step 5

Toast slightly the buns.

Step 6

On the bottom bun, add the spicy mayonnaise and a piece of Boston lettuce.

Step 7

Top it with a burger, a thin slice of Brie cheese and hot caramelized onions.

Step 8

Place the top bun and skewer through the middle to hold it all together.
