3 large eggs, whisked

1 ½ tablespoons flour (22 ml)

2 cups potato, peeled and coarsely grated (squeeze all the moisture out of them) (500 ml)

1 tablespoon onion, grated (15 ml)

Salt and pepper, to taste

½ cup canola oil (125 ml)

1 cup sour cream (250 ml)

1 cup apple sauce (250 ml)

1 tablespoon chives, chopped (15 ml)


1. In a medium glass bowl combine whisked eggs, flour, grated potato, grated onion and salt and pepper to taste.

2. In a large frying skillet pour oil and heat at high temperature. When oil is hot drop 2-inch coins of batter into the hot oil. Cook pancakes on each side until they are golden brown and the inside has been cooked thoroughly. When cooked, take off the heat and place pancakes on a paper towel. Serve with a sour cream and apple sauce and a few chives sprinkled on them.
