Sausage and Pepper Heroes

A tasty sandwich from Michael Smith made with Italian sausage, peppers, and fennel.

2 Tbsp canola oil
4 Italian sausages
1 red pepper, seeds removed and sliced thinly lengthwise
1 green pepper, seeds removed and sliced thinly lengthwise
2 medium onions, peeled and sliced thinly
half of a bulb of fennel, fronds removed and sliced thinly
Salt and pepper
4 whole wheat hero buns
1. Heat a skillet over medium-high heat and add oil. Gently pan fry the sausages until browned, then remove from the pan. Add the peppers, onions and fennel to the hot pan and sauté until softened and fragrant. Season with salt and pepper. Put the browned sausages back into pan and cover with a lid and continue cooking until sausages are cooked through (165 F). Serve stuffed into the whole wheat buns.
