Sausage and Sauerkraut Soup

2 tablespoons unsalted butter

1 red onion, sliced thinly

2 cloves garlic, minced

½ teaspoon dried thyme

1 teaspoon caraway seeds

3 cups beef stock

1 cup flat beer

4 cooked sausages, sliced

1 cup sauerkraut, drained

German mustard


1. Melt butter in pot over medium heat. Add red onion, garlic, thyme and caraway seeds. Cook for five minutes. Add beef stock and beer. Cook on medium low for twenty minutes.

2. Add sauerkraut and sausages. Bring to boil and turn off. To serve ladle into bowls and top with German mustard.
