(3 ounce) pieces Red Snapper, skin on, scaled and pin bones removed

Step 1
Season both sides of the fish with salt and freshly ground white pepper.
Step 2
In a large frying pan over high heat add olive oil. Carefully add cleaned fish, skin side down. Cook for 2 to 3 minutes or until the skin is golden brown. Turn fish over and cook for another 2 to 3 minutes.
