Slow-Cooked Potato Chowder

Make in advance and re-heat as needed for a quick and easy lunch.

1 package From the Farm™ Thick Cut potatoes
¼ cup onion, chopped
1 ¾ cups chicken stock
⅝ cup 35% cream (cream of chicken soup can be substituted)
⅜ cup softened cream cheese, cubed
½ cup bacon, cooked and crumbled
3 tsp chives, chopped
3 tsp Parmesan cheese, freshly grated
1. Combine From the Farm™ Thick Cut potatoes, onions, broth, and cream in slow cooker.
2. Cover and cook on low 8-10 hours or until potatoes are tender.
3. Add cream cheese and blend.
4. Top with bacon, Parmesan and chives before serving.
