Slow Roasted Turkey with Savory Herbs and Smoked Bacon

turkey breast (free range or organic, skin on)

strips smoked bacon

Tbsp olive oil

Tbsp butter

sprig fresh rosemary, roughly chopped

sprig fresh thyme, roughly chopped

sprig fresh sage, roughly chopped
coarse salt and freshly ground pepper to taste

Step 1

Season the turkey breast with coarse salt and freshly ground pepper. Add olive oil to a cast iron skillet and sear turkey over medium heat until golden brown (about 3 – 4 minutes), beginning with the skin side. Add butter, chopped rosemary, thyme and sage. Drape the bacon slices over the top of the turkey. Roast the turkey breast in the oven at 350 degrees until the bacon is crispy and the juices from the turkey run clear (about 30 – 35 minutes). Allow the turkey to rest in a warm place for 5 – 10 minutes, slice and serve with the crispy bacon.
