Herbed Sour Cream

cups sour cream
1
tsp garlic, minced

Tbsp dill, chopped
1
Tbsp parsley, chopped
1
lemon, zested and juiced
Pickled Red Onions
4
red onions, sliced thin on a mandolin
½
cup sugar
½
cup white vinegar
5
cups water, divided
1
pinch salt
Tostada
your favourite crisps, crackers or tostadas
smoked salmon

Step 1
Mix in a bowl place and store in refrigerator.
Step 2
Bring 4 cups of water to a boil. Blanch sliced red onions for 1 minute.
Step 3
Bring water sugar, salt, and vinegar to a boil, dissolving sugar.
Step 4
Add blanched red onions to the pot.
Step 5
Place in an insert or bowl and cover with plastic wrap.
Step 6
Place a dollop of Herbed Sour Cream on a crisp and add a fold of smoked salmon.
Step 7
Garnish with Pickled Red Onions, fresh herb (dill or fennel) and a drizzle of olive oil.
