Stacked Tomato Salad
- serves 4
2 red tomatoes
2 yellow tomatoes
4 oz white cheddar cheese (125g)
2 oz marble cheddar cheese (65g)
10 leaves of basil
1 tsp Dijon mustard (5ml)
½ cup extra virgin olive oil (125ml)
¼ cup white wine vinegar (65ml)
½ tsp dried oregano (2ml)
salt and freshly ground pepper
1. In a bowl, combine oil, mustard, vinegar and oregano. Season with salt and pepper.
2. Place 1 tbsp of vinaigrette in two bowls. Create cutouts of cheddar and marble cheese and add to bowls. Marinate for 15 minutes.
3. Slice tomatoes and assemble salads.
Kids': Layer stacks starting with a tomato slice, marble cheese cutout, slice of tomato. Repeat.
Adults': Layer stacks starting with a tomato slice, cheddar cheese cutout, basil leaf, slice of tomato. Repeat.
Tip: If yellow tomatoes are not available use red tomatoes. Use small cookie cutters to create mini cutouts; thread onto a toothpick and insert into a larger cheese cutout.
