Stone fruits are often served fresh over ice cream. Here they are simmered gently, bringing out even more of their sweetness. Serve warm over ice cream.

cups (2 L) stone fruit (such as peaches, nectarines, plums and plumcots), sliced
½
cup (125 mL) sugar
½
stick cinnamon
2
pods cardamom
1
pinch salt

Step 1
Combine fruit with sugar, spices and salt in a large pot. Bring to a boil then reduce to a medium-low. Cover and cook for 15 minutes or until fruit is very tender.
Step 2
Uncover and cook for 5 to 10 more minutes or until sauce is slightly thickened.
Step 3
Remove from heat. Discard cinnamon stick and cardamom pods.
Step 4
Spoon fruit and sauce over bowls of vanilla ice cream.
