5 clove garlic, minced
3 cm ginger, peeled and minced
¾ cup stout (drink the rest)
2 Tbsp Sriracha or hot sauce
2 Tbsp dark brown sugar
1 Tbsp olive oil
2 tsp ground cumin
2 tsp smoked paprika
2 tsp sweet paprika
1 lb(s) beef striploin, cut in 1-inch cubes
bamboo skewers, pre-soaked
kosher salt and freshly ground black pepper
1. Combine all of the marinade ingredients together in a small bowl. Place beef strips in a re-sealable plastic bag or a non-reactive container with a lid. Pour marinade over and turn to coat. Cover and refrigerate overnight.
2. Before grilling remove beef from marinade; discard the marinade. Season with Salt and pepper. Thread cubes on pre-soaked bamboo skewers. Grill on barbeque to medium (approximately 1-2 minutes on each side) or in a heavy bottomed fry pan.
