Strawberry Banana Muffin Petit Fours

Try these delicious banana and strawberry muffins with a hint of cinnamon and smothered in a bittersweet chocolate ganache.
1 cup sliced, fresh strawberries
2 Tbsp sugar
⅔ cup mashed ripe banana (about 2)
½ cup sugar
½ cup 2% milk
2 large egg whites
2 Tbsp vegetable oil
2 tsp vanilla extract
2 cup all-purpose flour
tsp baking powder
½ tsp ground cinnamon
¼ tsp fine saltGanache
2 oz semisweet or bitter chocolate
¼ cup whipping cream
1. Preheat oven to 350 °F and grease 24 mini muffin cups or line
2. Toss strawberries with 2 Tbsp sugar and set aside. In a large bowl, stir banana, remaining ½ cup sugar milk, egg whites, oil and vanilla together. In a separate bowl, sift flour, baking powder, cinnamon and salt. Stir dry ingredients into banana mixture just until blended. Fold in strawberries and spoon into muffin cups. Bake for 15 to 18 minutes, until a tester inserted in the center comes out clean. Allow to cool for 15 minutes before turning out.
3. For ganache heat cream and pour over chocolate Stir until melted and smooth. Dip muffin top in chocolate ganache. Top each mini muffin with the tips of the strawberries. Chill until ready to serve.
