Summer Asian Pasta Salad

YIELD: 6-8 Servings
1 lb(s) package of dried penne noodles
1 Tbsp sesame oil
⅓ cup Teriyaki sauce
2-3 tspThai sweet chili sauce
Juice of 1 lemon
1 red bell pepper cored and thinly sliced
1 yellow pepper cored and thinly sliced
¼ cup fresh chopped cilantro leaves
4 green onions thinly sliced
¼ cup chopped cashews
1. Cook pasta in a large pot of boiling salted water for 8-10 minutes or until pasta is el dente (softened with a firm texture). Drain pasta and cool.
2. In a small bowl whisk together sesame oil, teriyaki sauce, Thai chili sauce and lemon juice. Whisk ingredients until evenly blended.
3. Pour the dressing mixture over noodles. Add the fresh peppers, cilantro, green onion and chopped cashews. Mix to combine evenly.
4. Place pasta salad in the refrigerator for 30 minutes to chill and serve.
