ingredients

Sunburnt Lemon Pie

cup all purpose flour
¼
cup granulated sugar
cup butter
1
egg
1
tsp grated orange, rind
Tbsp orange, juice

Lemon Filling

¾
cup granulated sugar
¾
cup whipping cream
1
tsp grated lemon, rind
½
cup lemon, juice
2
tsp vanilla

Step 1

Preheat oven to 350 degrees F.

Step 2

In food processor, combine flour with sugar; using on/off motion, cut in butter until mixture resembles coarse meal.

Step 3

Combine egg, orange rind and juice, add all at once to flour mixture and mix just until ball forms.

Step 4

Wrap and refrigerate for 20 minutes.

Step 5

Press pastry into greased 11-inch (28 cm) flan pan; place on baking sheet.

Step 6

Line with foil or parchment paper.

Step 7

Fill with pie weights or dried beans.

Step 8

Bake in oven for about 20 minutes or until centre is set.

Step 9

Remove weights and foil.

Step 10

Meanwhile, in bowl, whisk eggs with all but 1 tablespoon (15 mL) of sugar; whisk in cream, lemon rind and juice and vanilla until smooth.

Step 11

Pour into pie shell.

Step 12

Bake for 30 minutes. Let cool.

Step 13

Sprinkle with remaining sugar.

Step 14

Cover edge with foil; broil for about 3 minutes or until sugar is dark brown.

Step 15

Let cool on rack.
