Sundried Tomato and Roasted Red Pepper Orzo

Use precooked orzo, and simply combine ingredients for this fresh dish.
1 cup orzo, cooked according to package directions
1 cup roasted red peppers, diced
1 cup sundried tomatoes packed in oil, diced
zest of 1 lemon
½ bunch parsley, chopped
1 clove garlic, pureed
1. Cook orzo according to package directions, while still warm, place in a bowl.
2. Add roasted red peppers, sundried tomatoes, lemon zest and garlic to bowl, toss.
3. Season with salt and pepper, add chopped parsley and incorporate before serving.
