Sweet Potato Chicken Curry

2 cups coconut milk
2 Tbsp curry paste or curry powder
2 Tbsp soy sauce
1 tsp salt
1 lb(s) chicken breast, cubed
1 white onion, diced
1 lb(s) sweet potato, peeled and cubed
1. In a medium saucepot combine the coconut milk with the curry paste or curry powder, soy sauce and salt. Stir until mixture is a uniform color and texture.
2. Increase heat to a medium/high and add cubed chicken. Cook until chicken is firm then add onion and sweet potato.
3. Cook for another 5 minutes before reducing heat to low. Cook for another 10 to 15 minutes.
4. Serve over rice.
