Directions for: Tabbouleh 2


180 mL (3/4 cup) fine bulgur

250 mL (1 cup) hot water

2 tomatoes, seeded and diced

375 mL (1 1/2 cups) finely chopped curly or flat-leaf parsley

60 mL (1/4 cup) finely chopped fresh mint

1 English cucumber, seeded and diced

4 green onions, finely chopped

Juice of one lemon

60 mL (1/4 cup) olive oil

1 jalapeno pepper, seeded and finely chopped



1. In a bowl, soak the bulgur in the hot water for 30 minutes.

2. In a large bowl, combine the bulgur with the remaining ingredients. Season with salt.
