Thai Red Pork Curry

1 450 g pork fillet, cut into thin strips
2 Tbsp groundnut oil
¼ jar Blue Dragon Thai Red Curry Paste
1 Tbsp minced garlic (or 2 cloves of fresh garlic crushed)
1 Tbsp minced ginger (or a 2 cm piece of fresh ginger peeled and finely chopped)
1 can Blue Dragon Organic Coconut Milk
2 Tbsp Blue Dragon Fish Sauce
2 tsp sugar
1. Cut the pork fillet into thin slices. Heat the groundnut oil in a large wok and fry the red curry paste, minced ginger and garlic for 30 seconds.
2. Add the coconut milk to the wok. Add the pork.
3. Then slowly add the fish sauce, juice of half a lime and sugar to taste. Bring to the boil and simmer for 5-6 minutes or until tender.
4. Serve scattered with thinly shredded red chilli.
