1. Into a food processor place: 1 8oz block of tofu (the best is medium texture) 2 shallots 1/2 Tbsp good curry powder (a little more if you are adventurous and not making it for kids) 2 Tbsp of unhulled sesame seeds (or hulled will do) 1/3 Cup of a low fat mayonnaise. I use "Nayonaise: a tofu mayo that is great.
2. Process until smooth, then add: 6 finely diced green onions 2-3 stalks celery very finely diced. Incorporate well into the tofu mixture. >From there you can use this filling in many applications, dips etc but it looks and tastes especially good this way:
3. Have ready: 6- 10inch coloured tortilla shells -Take a sun-dried tomato or a spinach tortilla shell and lay it in front of you. -Place a layer of the tofu filling over the entire wrap, except 1 inch on the upper edge furthest away from you. Be quite generous putting at least a 1/4 inch or more thickness of spread on the wrap. -Roll up the wrap starting at the lower edge closest to you, rolling as tightly as possible without pressing too hard. -You now have a "jelly roll" type log in front of you. Cut the two ends off and set aside, and then cut 6, one and one half inch segments. Place them seam side down on a platter, or pack them up for lunches! Usually I end up with 24 pinwheels, considering the wastage for the end pieces.
