Tomato Mac and Cheese with Italian Sausage

1 box of penne pasta (454g)
4 Italian sausages
½ cup olive oil
8 cloves garlic, chopped
1 cup flour
1 can chopped tomatoes (28oz)
1 can of evaporated milk 357mL (or 1.5 cups cream)
2 bay leaves
1 tablespoon minced fresh thyme leaves (or dried, or basil or oregano)
sprinkle or two of salt
8 ounces or so of grated Fontina cheese
8 ounces or so of grated Grana Padano Parmesan cheese
1. Preheat your oven to 350 F.
2. Cook the pasta in salted water until it is almost done but slightly undercooked. Brown the sausages and slice.
3. Using a sauce pot and the olive oil, sauté the garlic for a few minutes. Stir in the flour. Stir in the tomatoes and dairy. Add the herbs and bring to a simmer. Stir in the cheeses. Stir in the pasta and sausage. Pour the mixture into a casserole dish, bake for 30 minutes or so.
