Tomato Olive Salad

5 large ripe tomatoes, sliced into wedges
1 cup Calamata style olives, pitted
1 red onion, peeled and thinly sliced
Zest and juice of 1 lemon
¼ cup extra virgin olive oil
1 bunch chopped flat leaf parsley
Salt and pepper
1. Toss all the ingredients together in a medium-sized salad bowl.
