ingredients

Brownie Icing

cup icing sugar
cup unsweetened cocoa powder
cup unsalted butter
¼
cup milk (room temperature)
½
tsp vanilla
pinch salt

Tombstone Brownies

cup unsalted butter

cup packed brown sugar
cup white sugar

cup unsweetened cocoa powder

large eggs

cup vegetable oil

cup all-purpose flour

Step 1

Sift together icing sugar and cocoa powder. Set aside.

Step 2

Melt butter in large bowl.

Step 3

Stir milk, vanilla and salt into butter.

Step 4

Gradually mix in sugar mixture until smooth.

Step 5

Preheat oven to 350 F. Line bottom of 9 X 13-inch pan with parchment paper. In large bowl, over pot of simmering water (creating a double boiler), melt chocolate and butter. Remove from heat and cool to room temperature.

Step 6

In another bowl, mix brown and white sugars and cocoa powder, mashing out any brown sugar lumps. Mix in eggs, vegetable oil and vanilla. Stir melted chocolate mixture into sugar mixture.

Step 7

Gradually mix in flour (tip for measuring flour: stir flour, spoon into measuring cup, then level). Scrape into lined pan. Bake on middle rack 25 minutes.

Step 8

Cool before slicing into 18 rectangles. Cut off corners from one end of each rectangle to round off. Ice each “tombstone” with Brownie Icing (see next recipe). Top with cereal letters to spell out RIP, BOO, EEK.
