Tender breaded veal cutlets are divine smothered in a slow cooked tomato sauce.

Tomato Sauce

oz cans plum tomato

sprigs fresh Italian parsley

Veal Cutlets

cup all purpose flour

tsp pepper

cup dried Italian breadcrumbs

cup grated romano cheese
¼
cup grated parmesan cheese

tsp dried oregano

lb(s) veal, scallopini, cutlets

cup extra virgin olive oil

Step 1

In blender, purée tomatoes until smooth; pour into saucepan.

Step 2

Add parsley, basil, garlic, onion, oil, oregano, salt and hot pepper flakes; bring to boil.

Step 3

Cover partially and simmer for about 2 hours or until thickened. Set aside.

Step 4

Meanwhile, in shallow bowl, combine flour and half each of the salt and pepper.

Step 5

In another shallow bowl, whisk egg with 3 tablespoons (50 mL) of water.

Step 6

In third shallow bowl, combine bread crumbs, 2 tablespoons (25 mL) of the cheese and oregano.

Step 7

Sprinkle remaining salt and pepper over veal.

Step 8

Dredge each cutlet in flour, then dip into egg, letting excess drip off.

Step 9

Coat evenly with bread crumb mixture.

Step 10

Place on waxed paper lined baking sheet. (Make-Ahead: Cover and refrigerate for up to 4 hours.)

Step 11

In large nonstick skillet, heat oil over medium-high heat.

Step 12

Cook cutlets, in batches, and turning once for about 3 minutes or until light golden, adding more oil if necessary.

Step 13

Ladle some of the tomato sauce into large shallow baking dish.

Step 14

Top with cutlets, overlapping slightly.

Step 15

Ladle more of the sauce over top.

Step 16

Sprinkle with remaining Parmesan cheese; cover with foil and bake in 350°F (180°C) oven for about 30 minutes or until sauce is bubbly and veal is very tender and no longer pink inside.
