pouch UNCLE BEN'S® BISTRO EXPRESS® Long Grain & Wild - Fine Herbs rice

cup (500 mL) baby spinach, chopped

cup (500 mL) cooked chicken, chopped
1
cup (250 mL) celery, chopped
1
Granny Smith apple, chopped
½
cup (125 mL) walnuts, chopped and toasted
½
cup (125 mL) dried cranberries
¼
cup (60 mL) green onion, finely chopped

Tbsp (30 mL) olive oil
2
Tbsp (30 mL) grainy Dijon mustard
1
Tbsp (15 mL) honey
1
Tbsp (15 mL) white wine vinegar

Step 1

Prepare the UNCLE BEN’S® BISTRO EXPRESS® Long Grain & Wild – Fine Herbs Flavour rice. Transfer to a large bowl; cool slightly.

Step 2

Stir in the spinach, chicken, celery, apple, walnuts, cranberries and green onion.

Step 3

Whisk the oil with the mustard, honey and vinegar. Drizzle over the rice mixture; toss to coat.

Step 4

Tip: Substitute chickpeas for the chicken to create a vegetarian dish.
