Walnut Plum Pot Pies

2 cups all-purpose flour
2 tablespoons sugar
¾ tablespoon salt
dash ground nutmeg
1 cup unsalted butter, cut into pieces
1 egg yolk
3 tablespoons milkFruit
1 cup walnut pieces, lightly toasted
1 cup light brown sugar, packed
2 tablespoons all-purpose flour
1 tablespoon unsalted butter, melted
1 teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
2 pounds red plums, halved and pitted
1 egg and 2 Tbsp cold water for egg wash
1. Preheat oven to 375° F.
2. To prepare pastry, combine flour, sugar and salt. Cut in butter until the texture of coarse meal. Add egg yolk and milk and blend just until dough comes together. Wrap in plastic wrap and chill while preparing fruit.
3. For fruit, toss walnut pieces, brown sugar, flour, butter and spices. Pull out ¼ cup of mixture and set aside. Add plums to remaining nut mixture and toss. Spoon fruit into 6 ramekins and set on a baking tray.
4. On a lightly floured surface, roll out pastry to just shy of ¼ -inch thick and cut out 6 circles the diameter of the bowls. Cut a small opening in the center of each pastry circle and place on top of fruit. Brush pastry with egg wash and sprinkle with reserved nut mixture. Bake for 35 to 45 minutes, until filling is bubbling. Serve warm.
