Wet Prawn Burrito

This super filling dish is bursting with prawns, enchilada sauce and guacamole!

Directions for: Wet Prawn Burrito

Ingredients

Prawn Marinade

½ cup oil

½ Tbsp lemon juice

¼ bunch cilantro

¼ tsp paprika

¼ tsp dry mustard

¼ tsp salt

½ tsp black pepper

2 clove garlic

¼ cup onion, diced

1 small roasted jalapeno pepper

CR Sauce Mix

1 12 oz can red tomatoes

12 oz can crushed tomatillos

3 garlic cloves, peeled

½ cup onion, diced

1 small jalapeno pepper, roasted

CR Sauce

1 tsp salt

2 cup onion, diced

¼ cup green chile, diced

CR sauce mix

Enchilada Sauce Mix

1 12 oz can red tomatoes, stewed

3 garlic cloves, peeled

½ cup onion, diced

1 tsp crushed dried chiles

Enchilada Sauce

½ cup chile powder

1 pinch of salt

Vegetable oil

Enchilada sauce mix

Guacamole

¼ cup onion, diced

¼ cup tomato, diced

1 Tbsp lemon juice

1 small jalapeno pepper, roasted

1 pinch of salt

½ cup of cilantro

1 or 2 cloves garlic

5 avocadoes

Avocado Sauce

Guacamole mix

½ cup sour cream

1 small jalapeno pepper, roasted

½ tsp black pepper

¼ tsp dry mustard

¼ tsp paprika

¼ tsp salt

Assembly

1 lb(s) prawns, unshelled

Marinade mix

Flour tortillas

CR sauce

Enchilada sauce

Monterey jack cheese, shredded

Avocado sauce

Sour cream

Olive

Directions

Prawn Marinade

1. Place all ingredients in a blender and mix thoroughly.

CR Sauce Mix

1. Blend all ingredients thoroughly.

CR Sauce

1. Saute salt and onions in a pot with oil.

2. Add CR Sauce Mix and simmer for one hour.

3. Add green chile and stir.

Enchilada Sauce Mix

1. Place all ingredients into a blender and blend thoroughly.

Enchilada Sauce

1. Place chile powder in bottom of large stainless steel pot.

2. Add just enough oil to dampen powder and heat slightly.

3. Add remaining ingredients and bring to a boil, stirring often.

4. Stir and simmer for approximately one hour.

Guacamole

1. Blend all ingredients thoroughly, except the avocados.

2. Stir into avocados once blended.

3. Taste and adjust flavours as needed.

Avocado Sauce

1. Mix all ingredients together.

Assembly

1. Marinade prawns for approximately 2-4 hours.

2. Grill them till the inside is white and no longer clear and the skin colour has changed from blue to orange.

3. Preheat oven to 350 degrees Fahrenheit.

4. Place 10-12 prawns on a warm flour tortilla.

5. Add your desired amount of CR sauce and loosely wrap the tortilla up.

6. Cover the burrito with enchilada sauce and a few ounces of Monterey jack cheese.

7. Bake in the oven until cheese starts to lightly brown.

8. Cover the burrito with the avocado sauce.

9. Add a dab of sour cream and one olive as a garnish.
