Directions for: Zucchini Noodle Pasta


2 zucchinis, julienned

¼ cup + 1 teaspoon extra virgin olive oil

3 Tbsp pine nuts

¼ cup Parmesan cheese plus additional for garnish

1 clove garlic

¼ cup parsley

¾ cup fresh basil leaves

1 cup prepared tomato sauce, warm

salt and pepper


1. In a food processor, pulse together pine nuts, cheese, garlic, parsley and basil. Drizzle in all but 1 teaspoon olive oil and pulse until a smooth paste forms. Season with salt and pepper and set aside.

2. Heat remaining olive oil in a non-stick skillet. Add the zucchini noodles and cook for 2 minutes until slightly softened. Divide noodles between plates and top with tomato sauce and 2 tablespoons of prepared pesto. Garnish with parmesan cheese and a fresh sprig of basil.
