Zucchini with Tomatoes and Oregano

For that reason feel free to stir your own ideas into this dish. When you cook it once, it becomes yours, so personalize it a bit. Directions for: Zucchini with Tomatoes and Oregano


Olive oil

1 onion, chopped

3 zucchini, cut in half then into large chunks

3 ripe tomatoes, cut into eighths

Salt and pepper to taste

1 bunch fresh basil leaves


1. Heat a large skillet over medium high heat adding enough olive oil to lightly coat the bottom. Add the onion and sauté until golden. Add the zucchini and tomatoes and season with salt and pepper. Continue sautéing until the vegetables are tender. Stir in the basil leaves just before serving.
