4 Cheese Grilled Cheese and Onion Rings

Recipe summary

An easy-to-make lunch or dinner combo, with Canadian cheddar, brie, blue and pecorino cheeses served with crispy fried onion rings.

Note: The onion rings should be chilled for 4 hours at minimum, though overnight is best.

Ingredients

Onion Rings

  • 4 red onions
  • 1 litre buttermilk
  • 1/2 teaspoon paprika
  • 1 pinch salt and pepper
  • 2 cups flour
  • 1 dark beer of your choice
  • 1 teaspoon baking soda
  • 4 cups Panko

  • thick-sliced challah bread
  • butter
  • 30 grams old Canadian cheddar
  • 30 grams triple cream brie
  • 30 grams blue cheese
  • 30 grams truffle pecorino
  • fig jam

Directions

Onion Rings

  1. Slice the onions into rings. In a large bowl, place the onions in and sprinkle with paprika and salt and pepper. Pour in buttermilk, try to make sure onions are submerged as much as possible. Cover and place in fridge at least 4 hours, overnight would be best. Remove rings from buttermilk. Mix flour, baking soda, and beer to make a beer batter. Dip rings in the batter, then dip them in the panko. Deep fry until golden brown and delicious and serve.

4 Cheese Grilled Cheese

  1. Heat up a frying pan with a teaspoon of butter. Butter two slices of challah, both on one side.
  2. Place the bread butter side down in the pan. Cover the exposed sides of the bread with the cheeses. Cover pan to help melt the cheeses. Check on the bread making sure it doesn’t burn.
  3. When bread is golden brown and cheeses have melted, sandwich the two pieces together. Cut diagonally and serve with a side of fig jam.
