Ingredients

Cookies

  • 1/2 cup unsalted butter, room temperature
  • 1 cup light brown sugar, packed
  • 1 teaspoon vanilla
  • 1 large egg
  • 2/3 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • dash ground black pepper
  • 1 1/2 cups quick-cook oats

Filling

  • 2/3 cup creamy peanut butter
  • 2/3 cup icing sugar, sifted
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon ground cinnamon

Directions

Filling

  1. Cookies: cream butter and sugar until smooth. Beat in vanilla and egg. In a separate bowl, combine flour, baking soda, spices and salt. Add to butter mixture to blend, then stir in oats. Place the dough on a piece of plastic wrap and shape into a log about 2-inches wide. Chill at least 2 hours before slicing.
  2. Preheat oven to 350 °F and line a baking tray with parchment paper.
  3. Slice cookies into ¼ -inch slices and place 2 inches apart on prepared baking tray. Bake for 12 to 14 minutes, until browned. Cool cookies before removing from baking tray.
  4. Filling: beat all ingredients until blended. Spread filling on bottom of one cookie and sandwich with a second. Repeat until all cookies are filled. Store in an airtight container for up to 3 days.
