Ingredients

Hot Chicken Sandwiches

  • 4 cups warm cooked chicken, shredded
  • 12 slices Quick Sandwich Bread (see recipe)
  • 1 drizzle Hot Chicken Sauce (see recipe)
  • 1 can (284 ml/10 oz) peas, drained

Hot Chicken Sauce

  • 6 tablespoons butter
  • 1/2 cup flour
  • 1 teaspoon dry mustard
  • 1 teaspoon chili powder
  • 1/4 teaspoon paprika
  • pinch cayenne (or to taste)
  • 4 cups beef broth
  • 1 tablespoon ketchup
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon onion salt
  • 1 pinch Salt and pepper

Directions

Hot Chicken Sandwiches

  1. Divide the chicken among 6 slices of bread (about 180 ml/3/4 cup per sandwich). Spoon the sauce over the chicken. Top with 6 more slices of bread. Cover with sauce. Scatter a few peas on each sandwich.

Hot Chicken Sauce

  1. Melt the butter in a saucepan. Add the flour and cook, stirring constantly, until golden, about 3 minutes. Add the spices and cook for 1 more minute. Add the remaining ingredients and bring to a boil while whisking. Simmer gently, stirring frequently, for about 10 minutes. Adjust the seasoning. Cover and keep warm.
