Ingredients

  • 1 cup stone ground or regular cornmeal (250 ml)
  • 3/4 cup all purpose flour (175 ml)
  • 1/4 cup sugar (60 ml)
  • 4 teaspoons baking powder (20 ml)
  • 3/4 teaspoon salt (3 ml)
  • 1 large egg
  • 1 cup milk (250 ml)
  • 1/4 cup butter, melted (60 ml)

Directions

  1. Preheat oven to 350 degrees F.
  2. Lightly grease an 8 x 8-inch square baking pan or line the pan with parchment paper.
  3. In a large bowl sift the flour, baking powder, salt, and sugar. Stir in the cornmeal. In another bowl mix the egg, milk, and butter. Pour the wet ingredients into the dry and stir until just combined.
  4. Pour the batter into prepared cake pan. Bake in preheated oven for 25 to 35 minutes until just golden on top and a cake tester comes out clean. Remove from oven and let cool 10 minutes before serving. Serves 8 to 10.
