Ingredients

  • 2 bay leaves
  • 1 teaspoon salt
  • 3 teaspoons ground cayenne pepper (can add one more teaspoon for more spice)
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground nutmeg
  • 4 tablespoons butter
  • 3/4 cup finely diced white onion
  • 1/2 cup finely diced green bell pepper
  • 1/4 cup finely diced green onions - the white and light green part only
  • 4 cloves garlic, minced very fine
  • 1 tablespoon hot pepper sauce
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup evaporated milk
  • 1/2 cup ketchup
  • 1 1/2 pounds ground beef
  • 1/2 pound pound andouille sausage, casings removed (uncooked is best, if using pre-cooked andouille, make sure to chop very finely)
  • 2 eggs, beaten
  • 1 cup dried seasoned breadcrumbs
  • 3 tablespoons of finely ground breadcrumbs

Directions

  1. Melt the butter in a saucepan over medium heat. Add the onion, bell pepper, green onions, garlic, hot pepper sauce, Worcestershire sauce, and seasoning. Sauté until mixture starts sticking to the bottom of the pan, about 6 minutes. Stir in the evaporated milk and ketchup; continue cooking for 2 more minutes, stirring occasionally. Try a spoonful; it should be overly spicy as the mixture is used to season the whole meatloaf. Can add 4th teaspoon of cayenne if desired.
  2. Remove vegetable mixture from heat, and allow to cool to room temperature.
  3. Preheat oven to 350 degrees. Grease a large loaf pan by hand. Sift the 3 tablespoons of bread crumbs to coat the sides lightly. Dump breadcrumbs that do not stick to sides.
  4. In a bowl, mix by hand beef and sausage until combined - do not over mix. Set aside. Remove the bay leaves from the vegetable mixture. In the bowl with meat, add the eggs, the vegetable mixture, and the 1-cup breadcrumbs. Mix by hand until all combined and you can form it into a loaf. The mixture will be moist, not dry.
  5. Put mixture into loaf pan.
  6. Bake uncovered at 350 degrees F (175 degrees C) for 25 minutes. Then raise heat to 400 degrees F (200 degrees C) and bake for another 35 minutes until top starts to brown, may bubble a bit. Let stand for 5 minutes before serving.
  7. Make slices about 1/2 to 3/4 of an inch thick and serve. Meat loaf is moist, so it may fall apart a bit.
