A make-ahead breakfast that makes having overnight guests easy.

Ingredients

  • 1/2 loaf Texas toast
  • 10 slices bacon, cooked and diced
  • 2 cups shredded lactose free Swiss cheese
  • 1 large sweet red pepper, chopped
  • 4 green onions, chopped
  • 8 eggs
  • 2 cups Natrel Lactose Free Milk
  • 1/4 cup chopped fresh basil
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Directions

  1. Remove crusts and cut bread in 1” (2.5 cm) cubes. Put in single layer in greased 12”x7” (3 L) baking dish
  2. Sprinkle bacon, cheese, pepper and onions on top.
  3. Beat remaining ingredients together. Pour into casserole. Press down lightly to moisten all ingredients.
  4. Cover with plastic wrap. Refrigerate overnight.
  5. Bake, uncovered at 350oF (180oC) for 40 to 50 minutes, or until puffed and golden.
  6. Tip: · For a vegetarian dish, replace bacon with 1 cup (250 mL) chopped cooked asparagus or broccoli.
