Ingredients

  • 1 package dry active yeast (1 tbsp) (7 ml)
  • 1 tablespoon molasses (15 ml)
  • 3/4 cup warm water (180 ml)
  • 1/2 cup cornmeal (125 ml)
  • 1/2 cup whole-wheat flour (125 ml)
  • 1 cup bread flour (250 ml)
  • 1 teaspoon salt (5 ml)
  • 4 tablespoons bacon fat, for the skillet (60 ml)

Directions

  1. Whisk the yeast, molasses, milk and water together in either the bowl of a stand-up mixer, or in a bowl with a whisk and let sit 5 to 10 minutes, until foamy. Add the cornmeal, flour and salt to the yeast mixture and combine with the dough hook attachment on medium speed, or mix with your hands. Turn the dough out onto a floured surface and knead for 5 minutes until smooth and elastic. Form into a smooth ball and place in a large oiled stainless steel bowl. Cover with plastic, and leave in a warm place for 1 to 1 1/2 hours or until doubled in size.
  2. Punch down the dough, divide it into eight pieces and form into balls. Cover with a damp towel and let rise for 15 minutes.
  3. Roll each ball out to form a flat disc shape, cover with a towel, and let rest 30 minutes.
  4. Heat the bacon fat in a large cast iron skillet on medium heat and begin to cook the flatbreads for 5 to 7 minutes per side or until golden and cooked through. Keep the skillet breads warm on a platter, covered with a towel until ready to serve.
