Lamb's lettuce is also known as mâche, corn salad or field salad. It has dark green, small, tender leaves that are slightly nutty in flavour. Baby spinach also works nicely in this salad. Citrus is always refreshing in salad, depending on the season, you can use blood oranges or grapefruit.
