This dish is one of the most famous in the Chinese culture for New Year’s celebrations throughout the Asian region. It is famous due to the action necessary as one must toss the ingredients into the air in order to mix them as they say out loud “fung sung soy hei” which sounds as if they are asking for the most luck possible in everything they do in life, be it investing, working or even gambling. The upward motion of tossing the ingredients creates the thought of moving the economy upward towards the sky.

Ingredients

  • 400 grams salmon, skinned and boneless, julienne (14 ounces)
  • 120 grams honeydew melon, julienne (4 ounces)
  • 120 grams cantaloupe melon, julienne (4 ounces)
  • 120 grams white turnip (daikon), julienne (4 ounces)
  • 100 grams pomelo, peeled (3.5 ounces)
  • 40 grams red chile, fine julienne (1.4 ounces)
  • 60 grams peanuts, crushed (2.1 ounces)
  • 50 millilitres plum sauce (1/4 cup)

Directions

  1. Place the honeydew, cantaloupe, white turnip and pomelo around a serving platter.
  2. Place salmon into the center of the serving plate.
  3. Place red chili and peanuts on top of salmon.
  4. Using chopsticks, gently toss all ingredients in an upward motion in an effort to bring on “auspicious” new beginnings for the coming new year. Serve plum sauce on the side or toss together if desired.
